Shrimp Fajitas are a snap to put together with this easy sheet pan recipe.
This time of year gets insanely busy for our family. Calves are bring born and need to be checked on, Cows need to be moved from one pasture to another, horses need to be shod, track, softball, gymnastics, piano, school, church, all gets kicked into high gear this time of year in order to get everything done before school gets out in May.
What this means for me is that I need to have a meals ready quickly without a lot of fuss so everyone gets to where they are going on time. (Not that we are EVER on time but there is still hope.) That is why I love sheet pan dinner. Through everything on to a sheet pan, add some olive oil and spices and put it in the oven. Quick, easy, and delicious.
This sheet pan dinner I used shrimp, red and green bell peppers, onion and a homemade fajita seasoning to make shrimp fajitas.
Ten minutes in the oven and the peppers are soft but still have a little crunch, whilethe onion and the shrimp are perfectly cooked through. Even my husband who HATES seafood chowed down on this. Apparently shrimp does not count as seafood in his book.
Serve the shrimp and peppers with warm tortillas and some Avocado salsa and dinner is ready in enough time to get out the doors for the next batch of activities.
The best part about this dish besides the awesome flavor? Only ONE dish gets added to the sink!
